Ceylon Cinnamon Tea Recipe (Hot or Iced)
Makes ~1 litre | Simmer ~30 minutes | Chill overnight (optional) Water and quills, simmered slowly until the liquid turns a warm amber-honey colour. No sugar, no calories, no caffeine unless you add it. Just a gently spiced cup that's as good iced in summer as it is hot in winter. It's the simplest way there is to bring true Ceylon cinnamon into your day.

Why Ceylon Cinnamon Tea Is Worth Making
Most of us meet cinnamon as a dusting on top of something else: a coffee, a pastry, a bowl of porridge. Brewing it as a tea is different. Simmering whole quills draws the water-soluble compounds out of the bark slowly and completely, so what ends up in your cup is the cinnamon itself rather than a suggestion of it.
That matters, because those compounds are where the interest lies. Ceylon cinnamon is naturally rich in polyphenols, plant compounds studied for their antioxidant activity, which may support overall cellular health. Cinnamon has also been researched for its possible role in insulin sensitivity and post-meal blood sugar response, and for a mild anti-inflammatory effect. None of this makes a cup of tea a treatment for anything, and we'd never suggest otherwise. But a zero-calorie, hydrating drink that happens to carry those compounds is a pleasant thing to have in the fridge.
The other reason to brew it as a tea is the flavour. Ceylon cinnamon is delicate where cassia is blunt: floral, citrusy, sweet without any harshness or heat. Steeped gently, it tastes like it smells.
What You'll Need
• 1 litre water
• 4 Ceylon cinnamon quills (Alba grade if you have them)
• Optional:honey, to taste
• Optional, for iced: 1–2 drops lemon juice; a few slices of fresh ginger
• Optional, for hot: 1 tsp cinnamon black tea blend
Method
1. Simmer. Add the water and cinnamon quills to a saucepan. Bring to the boil, then reduce the heat and simmer for around 30minutes, until the liquid turns a warm amber-honey colour. Don't rush this. The colour is your cue.
2. Strain. Pour the tea through a strainer into a jug.The quills have more to give, so keep them for a second, lighter brew if you like.
3. Serve hot. Drink it as it is, or sweeten with a little honey. For a stronger, fuller cup, pour the hot cinnamon tea over 1 tsp of a cinnamon black tea blend in a strainer and let it steep for 15 minutes.
4. Serve iced. Pour the strained tea into a bottle and refrigerate overnight. Serve over ice with 1–2 drops of lemon juice. Add fresh ginger slices if you'd like a little more warmth behind the sweetness.
The Role of Each Ingredient
Ceylon cinnamon quills
The whole point of the drink. Whole quills release their flavour and their polyphenols slowly and evenly during a long simmer, which ground cinnamon can't quite do without turning the liquid cloudy.Four quills to a litre gives a tea with real depth that still tastes clean.
Water
Nothing to hide behind, which is exactly why the quality of the cinnamon shows so clearly here. Filtered water gives the cleanest result.
Honey (optional)
A small amount rounds the tea out and lifts it's natural sweetness. Left out, the drink is genuinely zero-calorie, worth knowing if you're using it as a replacement for something sweeter.
Lemon (optional)
One or two drops, no more. The acidity sharpens the cinnamon and keeps the iced version tasting bright rather than heavy.
Fresh ginger (optional)
Adds a gentle heat that plays against cinnamon's sweetness, and brings its own polyphenols along with it. Particularly good in the iced version.
Cinnamon black tea blend (optional).
For those mornings when you want caffeine as well as warmth. Steeping it in the already-brewed cinnamon tea rather than plain water doubles the spice without doubling the bitterness.

- Add a second spice. A cardamom pod or two, ora single clove, works beautifully without crowding the cinnamon out.
- Serve it after dinner. Caffeine-free and faintly sweet, it makes a good alternative to dessert.
- Try it with a splash of milk. Oat milk in particular turns the hot version into something close to a chai.
- Don't over-boil. A hard, rolling boil for 30 minutes will make the tea bitter. Keep it at a bare simmer.
Why the Quality of Your Cinnamon Matters
In a recipe this simple, there is nowhere for poor cinnamon to hide. Most of what's sold as cinnamon in Australian supermarkets is cassia: a different bark entirely, thicker and harder, with a sharper, hotter flavour. Cassia also contains considerably more coumarin, a naturally occurring compound that may pose risks to liver health when consumed in large amounts over time. Ceylon cinnamon's much lower coumarin content is what makes it the sensible choice for something you plan to drink every day.
